Recipe Description
My first favorite restaurant in Atlanta and one of the first places I could count on for delicious craft cocktails was Ecco in Midtown and this was their best and most acclaimed drink. It’s still one of my favorites and really hits the spot when you’re in the mood for something bright and refreshing before dinner.
Ingredients

1.75 ounces Hendrick's Gin
or similar - 0.5 ounce St. Germaine Elderflower Liqueur
- 0.75 ounce fresh lemon juice

0.25 ounce simple syrup
demerara syrup may work even better (that's simple syrup made with raw sugar) -
2 dashes peach bitters
generous dashes! - 4 leaves fresh mint

1 twist lemon
for garnish
Preparation
Put a coupe or sour glass in the freezer. Combine all ingredients except the twist in a shaker with ice. Shake well (you will be grinding up those mint leaves!)
Service
Remove glass from freezer, strain cocktail into glass, garnish with twist & wake up to the bright refreshing color and flavors this delicious cocktail has to offer!
